For our open sushi bar we are looking for a personality that not only processes fish but celebrates.

Your mission:

• Handwerkskunst: Preparation of high quality sushi (Sashimi, Nigiri, Gunkan, Signature Rolls) with highest precision.
• Product Responsibility: Professional fill of whole fish and handling of premium products (e.g. Toro, Hamachi, Sapphire mussels).
• The perfect rice: Responsibility for the preparation and reconversion of the Shari – the basis of our quality.
• Aesthetics: Setting up food at the highest level (plating) – suitable for the stylish ambience of the Enso.
• Hygiene: Striking compliance with HACCP guidelines and cleanliness at work (Open Kitchen!).

This is what distinguishes you:

• You have well-founded professional experience as a sushi cook.
• You control the safe handling of the Japanese knife (Yanagiba).
• You have an eye for details and work quietly and concentrated even with high guest appearances.
• You are a team player and communicate with colleagues respectfully.
• Languages: German and/or English.

Requirements:

• Professional experience as a sushi boss.
• Excellent knife skills.
• Passion for Japanese cuisine and aesthetics.
• Language skills: English or German.
